Raw Kale salad
Ingredients
1 bunch kale, washed & stems removed
1 tsp. of Olive Oil
pinch of sea salt
half lemon
Optional add ons: (can pick & choose to your taste)
dried fruit (cherries)
Pumpkin seeds / Pine nuts
feta cheese
slivered almonds
Cherry tomatoes
Finely chopped garlic
directions
Rinse kale under cold water, then remove leaves from the rib of kale. tear kale into smaller pieces. Add kale to a bowl, drizzle olive oil over kale, then squeeze lemon on top (remove lemon seeds before sqeezing). Add sea salt. Massage kale for 2-3 minutes with your hands to tenderize for 2-3 minutes. (longer to achieve your desired texture). Leaves should turn to a dark green color.
Add rest of ingredients to taste
